I would probably start by self-publishing ($100ish for probably 50-60 books) and then doing giveways on mommie or homeschool blogs to get people interested, offering a few free download pages, and then offering the whole book for some nice little price like $7. But that's just a guess--I've no experience with coloring books. =)
